2 Method
Step 1. Rinse the jasmine rice under cold water several times until the water runs clear to remove excess starch.
Step 2. In a large heavy-bottomed pot or Dutch oven, combine the rinsed rice, chicken thighs, astragalus root slices, red dates, and ginger slices.
Step 3. Pour in the chicken stock or water and bring the mixture to a full boil over high heat.
Step 4. Once boiling, reduce the heat to low and cover the pot partially with a lid. Simmer gently for 60 minutes, stirring every 15 minutes to ensure the rice doesn't stick to the bottom.
Step 5. After 60 minutes, the rice should have broken down into a creamy porridge texture. Remove the chicken thighs and the woody astragalus root slices.
Step 6. Shred the chicken using two forks and return the meat to the pot. Discard the astragalus root slices.
Step 7. Stir in the goji berries and simmer for an additional 5 minutes.
Step 8. Season with salt to taste. Ladle the congee into warm bowls and garnish with sliced green onions and a drizzle of toasted sesame oil.
