2 Method
Step 1. Rinse the dried red dates and goji berries under cold running water to remove any surface dust.
Step 2. Use a knife to slice the red dates in half and remove the pits; this helps the flavor and nutrients infuse into the water more effectively.
Step 3. In a medium saucepan, combine the prepared red dates, ginger slices, and 4 cups of water.
Step 4. Bring the mixture to a boil over high heat, then immediately reduce the heat to low. Cover and simmer gently for 20 minutes.
Step 5. Add the goji berries to the pot and continue to simmer for an additional 5 minutes.
Step 6. If using rock sugar, add it now and stir until completely dissolved. If using honey, wait until the tea has cooled slightly before stirring it in.
Step 7. Strain the tea into cups or serve it as is. The softened dates and berries are edible and highly nutritious.
