7 cups 1650 ml Water or Vegetable Broth
0.5 cup 75 g Roasted Unsalted Peanuts
3 tbsp 27 g Black Sesame Seeds
2 tbsp 30 ml Toasted Sesame Oil
1 inch 2.5 cm Fresh Ginger, sliced
2 tbsp 20 g Dried Goji Berries
4 pieces 4 pcs Dried Red Dates (Jujubes)
1 tbsp 15 ml Soy Sauce
2 stalks 2 pcs Green Onions, chopped

Step 1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.

Step 2. In a large pot, combine the rinsed rice, water or broth, sliced ginger, and dried red dates. Bring the mixture to a boil.

Step 3. Once boiling, reduce the heat to low and cover the pot partially. Simmer for 35-40 minutes, stirring occasionally to prevent the rice from sticking to the bottom, until the rice is broken down and the consistency is creamy.

Step 4. While the rice is simmering, lightly toast the black sesame seeds in a dry pan over medium heat for 2 minutes until fragrant. Set aside.

Step 5. Ten minutes before the congee is finished, stir in the roasted peanuts and dried goji berries.

Step 6. Once the congee reaches your desired thickness, stir in the soy sauce and toasted sesame oil. Remove the ginger slices if desired.

Step 7. Serve hot in bowls, garnished generously with toasted black sesame seeds and chopped green onions.
