4 cups Chicken or pork broth
3 tbsp All-purpose flour
2 tbsp Vegetable oil
1 tsp Dried Mexican oregano
0.5 tsp Ground cumin

Season the pork cubes generously with salt and pepper. In a large heavy-bottomed pot or Dutch oven, heat the vegetable oil over medium-high heat. Brown the pork in batches until golden on all sides, then remove and set aside.

In the same pot, add the diced onion. Sauté for 5-6 minutes until translucent, scraping up the browned bits from the bottom. Stir in the minced garlic and cook for another minute until fragrant.

Sprinkle the flour over the onions and garlic. Stir constantly for 2 minutes to cook out the raw flour taste but do not let it burn.
