Step 1. Briefly rinse the dried cordyceps flowers under cool water and soak them in a bowl of fresh water for 10 minutes; drain and set aside.

Step 2. Blanch the chicken pieces in a pot of boiling water for 3-5 minutes to remove blood and impurities. Drain the chicken and rinse thoroughly with cold water.

Step 3. In a large soup pot or clay pot, combine the blanched chicken, soaked cordyceps flowers, ginger slices, and red dates.

Step 4. Pour in 1.5 liters of fresh water and bring the mixture to a rolling boil over high heat.
