1 Ingredients

Qty Ingredient
1.5 kg 1500 g Whole Organic Free-Range Chicken
2 slices 10 g Fresh Ginger
1 pinch 1 g Sea Salt

2 Method

1

Step 1. Prepare the chicken by removing the head, feet, and internal organs. Rinse thoroughly and pat dry with paper towels.

2

Step 2. Use a heavy meat mallet or the back of a cleaver to smash the chicken bones, especially the backbone and thighs. This helps release the marrow and essence during the long cooking process.

3

Step 3. Prepare a double-boiling setup: Place a small heat-resistant bowl upside down inside a larger heat-resistant ceramic pot. The vacuum created will draw the chicken essence into the larger pot while keeping the chicken pieces separate.

4

Step 4. Arrange the chicken pieces on top of the inverted small bowl. Add the ginger slices on top.

5

Step 5. Cover the large ceramic pot tightly with two layers of aluminum foil or a very tight-fitting lid to ensure no steam or external water enters the pot.

6

Step 6. Place the ceramic pot into a large steamer or a deep stockpot filled with water (the water should reach halfway up the side of the ceramic pot).

7

Step 7. Simmer on low heat for 6 to 8 hours. Check the water level in the external steamer periodically and top up with boiling water as needed.

8

Step 8. Once finished, carefully remove the chicken pieces. Lift the inverted bowl to release the collected golden essence.

9

Step 9. Strain the essence through a fine-mesh sieve or coffee filter to remove any particles. Skim off the excess oil from the surface before serving warm.

💡 Chef's Tips

  • ·

Always use a mature, free-range chicken (yellow skin preferred) for a deeper flavor and higher nutrient profile.

  • ·

Do not open the ceramic pot during the steaming process to prevent any water vapor from diluting the essence.

  • ·

The leftover chicken meat will be dry; it can be shredded and seasoned with soy sauce and sesame oil for a side dish so it doesn't go to waste.

  • ·

For a clearer essence, chill the liquid in the fridge until the fat solidifies on top, then scrape it off before reheating.

? FAQ

Why is there no water added to the recipe?
True Drip Chicken Essence is a pure extraction of the chicken's own juices and nutrients; adding water would result in a standard chicken soup rather than a concentrated essence.
Who should drink chicken essence?
It is traditionally given to the elderly, pregnant women, students studying for exams, or anyone recovering from illness for a concentrated energy boost.
How long can I store the essence?
It can be kept in the refrigerator for up to 3 days or frozen in sterile containers for up to 3 months.
Can I use a slow cooker for this?
Yes, you can place the ceramic pot setup inside a slow cooker with water, but ensure the setting is high enough to maintain a consistent steam.
