Heat the ghee or oil in a small tadka pan or heavy-bottomed skillet over medium heat until it starts to shimmer.
Add the cumin seeds; once they begin to crackle and turn a deep golden brown, add the dried red chilies and asafoetida (hing).
Stir in the minced garlic and grated ginger. Sauté for about 30-45 seconds until the garlic is fragrant and turns a light golden color, being careful not to burn it.
Add the fresh curry leaves. They will splutter, so stand back slightly. Fry for 10 seconds until they become crisp.
Turn off the heat immediately and add the Kashmiri red chili powder, stirring quickly to incorporate it into the hot fat without burning the spice.
Pour the sizzling hot tadka directly over your cooked dal. Immediately cover the pot with a tight-fitting lid for 2-3 minutes to allow the aromatic oils to penetrate the lentils.
