In a large bowl, whisk together the yogurt, 1 tablespoon of ginger-garlic paste, garam masala, chili powder, and a pinch of salt. Add the chicken pieces and coat thoroughly; marinate for at least 30 minutes in the refrigerator.
Heat a large skillet or grill pan over medium-high heat with a drizzle of oil. Sear the marinated chicken in batches until charred and cooked through, then set aside.
In the same pan (cleaned if necessary), melt the butter over medium heat. Add the remaining ginger-garlic paste and sauté for 1 minute until fragrant.
Pour in the tomato puree and sugar. Simmer for 10-12 minutes on low heat until the sauce thickens and the fat starts to separate from the edges.
Stir in the heavy cream and crushed kasuri methi, then add the cooked chicken pieces back into the gravy.
Simmer for an additional 5 minutes to allow the flavors to meld. Garnish with fresh cilantro and serve warm with garlic naan or basmati rice.
