Wash the lentils and kidney beans thoroughly, then soak them in water for at least 8 to 12 hours.
Drain the soaking water and add the lentils and beans to a pressure cooker or large heavy-bottomed pot with 4 cups of fresh water and salt. Cook until completely soft and mashable (about 8-10 whistles in a pressure cooker or 60-90 minutes simmering in a regular pot).
In a separate heavy-bottomed pan, melt 2 tablespoons of butter over medium heat. Add cumin seeds and let them sizzle.
Stir in the ginger-garlic paste and sauté for 2 minutes until the raw aroma disappears. Pour in the tomato puree and Kashmiri chili powder. Cook until the mixture thickens and the oil starts to separate from the sides.
Lightly mash the cooked lentils against the side of the pot to release starches, then pour the lentil mixture into the tomato masala base. Stir well to combine.
Add the remaining butter and simmer on very low heat for at least 45 minutes. Stir frequently and add small amounts of hot water if the consistency becomes too thick. This slow simmering is what creates the signature creamy texture.
Crush the Kasuri Methi between your palms and add it to the pot along with the garam masala. Stir in the heavy cream and simmer for an additional 5-10 minutes.
Garnish with a swirl of cream and fresh coriander leaves. Serve hot with garlic naan or steamed basmati rice.
