"A fiery and tangy masterpiece from Goa, this Chicken Vindaloo uses a traditional vinegar marinade and freshly ground spices to create a deep, complex heat. This recipe balances the sharp acidity of Goan vinegar with the warmth of Kashmiri chilies for a truly authentic flavor profile."

1 Ingredients

Qty Item
1.5 lbs Boneless chicken thighs, cubed
10 pieces Kashmiri dried red chilies
1 tsp Cumin seeds
10 pieces Black peppercorns
1 inch Cinnamon stick
5 pieces Cloves
0.5 tsp Mustard seeds
0.33 cup Goan toddy vinegar (or Apple Cider Vinegar)
1 inch Fresh ginger, chopped
8 pieces Garlic cloves
0.5 tsp Turmeric powder
3 tbsp Vegetable oil
2 pieces Large onions, finely sliced
1 tsp Jaggery or brown sugar
1 tsp Salt

2 Instructions

1

Prepare the marinade: Soak the dried Kashmiri chilies in the vinegar for 20 minutes until softened.

2

Toast the whole spices: In a small pan, lightly toast the cumin seeds, peppercorns, cinnamon, cloves, and mustard seeds until fragrant.

3

Create the Vindaloo paste: Blend the soaked chilies (with the vinegar), toasted spices, ginger, garlic, and turmeric into a smooth, thick paste. Add a splash of water if needed.

4

Marinate: Coat the chicken pieces thoroughly with the spice paste. Cover and refrigerate for at least 2 hours, or ideally overnight.

5

Cook the base: Heat oil in a heavy-bottomed pot over medium heat. Sauté the onions until they are deep golden brown and caramelized.

6

Sear the meat: Add the marinated chicken to the pot. Increase the heat to medium-high and sauté for 5-7 minutes until the meat is sealed and the oil starts to separate from the spice paste.

7

Simmer: Add 1 cup of water and salt. Cover and simmer on low heat for 25-30 minutes until the chicken is tender.

8

Final touch: Stir in the jaggery or brown sugar to balance the acidity. Adjust salt to taste and serve hot.

💡 Tips & Tricks

  • ·

For the best results, marinate the chicken for a full 24 hours to allow the vinegar to tenderize the meat.

  • ·

Use Kashmiri chilies specifically; they provide a vibrant red color without being overwhelmingly spicy.

  • ·

If you cannot find Goan toddy vinegar, a high-quality malt vinegar or apple cider vinegar is the best substitute.

  • ·

The curry tastes even better the next day as the flavors continue to develop and mellow.

? Frequently Asked Questions

How spicy is Chicken Vindaloo?
While traditionally very hot, the heat level in this recipe is manageable because of the Kashmiri chilies. You can reduce the number of chilies for a milder version.
Can I use chicken breast instead of thighs?
Yes, but thighs stay much juicier during the long simmering process required for a Vindaloo.
What should I serve with Vindaloo?
It is best served with steamed Basmati rice or traditional Goan crusty bread (Pao) to soak up the sauce.
Does this recipe contain potatoes?
Authentic Goan Vindaloo does not traditionally include potatoes; the 'aloo' in the name comes from 'alho' (garlic in Portuguese), not the Hindi word for potato.
