| 2 tbsp | Biryani Masala |
| 1 bunch | Fresh Mint and Cilantro |
2 Instructions
Marinate the chicken with yogurt, ginger-garlic paste, biryani masala, and salt for at least 30 minutes.
Soak the basmati rice in water for 30 minutes, then drain. Parboil the rice in a large pot of salted water with whole spices (cardamom, cloves, cinnamon) until it is 70% cooked (grain should still have a slight bite).
Slice the onions thinly and deep-fry them in oil or ghee until they are golden brown and crispy (birista). Drain on paper towels.
Infuse the saffron in warm milk and set aside.
In a heavy-bottomed pot (Dutch oven), heat ghee and cook the marinated chicken until it is half-cooked and the oil starts to separate.
Layer half of the parboiled rice over the chicken. Sprinkle half of the fried onions, chopped mint, and cilantro.
Add the remaining rice as a second layer. Top with the remaining fried onions, herbs, and drizzle the saffron milk over the top.
Seal the pot tightly with aluminum foil and a lid. Cook on very low heat (dum) for 20 minutes.
Turn off the heat and let it rest for 10 minutes before fluffing gently and serving.
