Step 1. Prepare the caramelized onions: Melt butter in a heavy skillet over medium-low heat. Add thinly sliced onions and a pinch of salt. Cook, stirring occasionally, for 20-25 minutes until deep golden brown. Set aside.
Step 2. Make the truffle aioli: In a small bowl, whisk together the mayonnaise, minced garlic, truffle oil, and a squeeze of lemon juice (optional). Season with salt and pepper. Refrigerate until ready to use.
Step 3. Shape the patties: Gently divide the beef into 4 equal portions. Form into patties about 1-inch thick, being careful not to overwork the meat. Press a small thumbprint indentation into the center of each patty to prevent bulging during cooking.
Step 4. Cook the burgers: Heat a cast-iron skillet or grill to high heat. Season both sides of the patties generously with salt and pepper. Sear for 3-4 minutes per side for medium-rare. Place a slice of Gruyère on each patty during the last minute of cooking and cover with a lid to melt.
Step 5. Toast the buns: Lightly butter the cut sides of the brioche buns and toast them on the grill or skillet until golden brown.
Step 6. Assemble: Spread a generous layer of truffle aioli on the bottom bun. Top with a handful of arugula, the cheesy beef patty, and a heap of caramelized onions. Close with the top bun and serve immediately.
💡 Chef's Tips
-
·
Keep the meat cold until the moment it hits the heat to ensure the fat doesn't melt prematurely.
-
·
Do not press down on the patties with a spatula while cooking; this squeezes out the flavorful juices.
-
·
Use an 80/20 lean-to-fat ratio for the perfect balance of flavor and moisture.
-
·
Let the burgers rest for 2-3 minutes after cooking to allow the juices to redistribute.
