How to Make Creamy Mushroom Risotto with Truffle Oil
In a medium saucepan, warm the vegetable broth over low heat; keep it at a gentle simmer throughout the cooking process.
Melt 2 tablespoons of butter in a large, heavy-bottomed skillet over medium-high heat. Add the mushrooms and sauté until browned and tender, about 8 minutes. Remove mushrooms and set aside.
In the same skillet, melt the remaining 2 tablespoons of butter. Add the shallot and garlic, sautéing for 2 minutes until translucent.
