2 Method
Step 1. Pat the dory fillets dry with paper towels to ensure a crisp sear. Season both sides with salt and pepper, then lightly dust with flour, shaking off any excess.
Step 2. Heat the olive oil and 1 tablespoon of butter in a large non-stick skillet over medium-high heat until the butter begins to foam.
