2 Method
Step 1. In a small mixing bowl, whisk together the maple syrup, Dijon mustard, apple cider vinegar, minced garlic, smoked paprika, salt, and pepper until well combined.
Step 2. Reserve 1/4 cup of this glaze in a small dish for basting later.
Step 3. Place the chicken breasts in a large resealable bag or shallow bowl and pour the remaining glaze over them. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
Step 4. Preheat your grill to medium-high heat (about 400°F/200°C) and lightly oil the grates to prevent sticking.
Step 5. Remove the chicken from the marinade and place it on the hot grill. Discard the used marinade.
Step 6. Grill the chicken for 6 to 8 minutes per side. During the final 3 minutes of cooking, brush the reserved 1/4 cup of glaze onto both sides of the chicken.
Step 7. Cook until the internal temperature reaches 165°F (74°C) using a meat thermometer.
Step 8. Transfer the chicken to a clean plate and let it rest for 5 minutes before serving to ensure the juices stay inside.
