2 Method
Step 1. Preheat your outdoor grill or indoor grill pan to medium-high heat (about 400°F). Lightly oil the grates to prevent sticking.
Step 2. In a small bowl, whisk together 2 tablespoons of olive oil, minced garlic, half the lemon juice, salt, and pepper. Brush this marinade generously over both sides of the salmon fillets and the vegetables.
Step 3. Place the salmon fillets on the grill, skin-side down. Grill for 4-5 minutes per side, or until the salmon reaches an internal temperature of 145°F and flakes easily.
Step 4. Simultaneously place the asparagus and cherry tomatoes on the grill. Cook the vegetables for 5-7 minutes, turning occasionally until charred and tender.
Step 5. While the salmon rests, prepare the sauce by mixing the Greek yogurt, fresh dill, remaining lemon juice, and a pinch of salt in a small bowl.
Step 6. Arrange the grilled salmon and charred vegetables on a large serving platter. Drizzle with the lemon-dill sauce and garnish with extra fresh herbs if desired.
