2 cloves Garlic cloves, minced
4 cups Vegetable broth
1/2 cup Heavy cream
4 tbsp Unsalted butter
12 leaves Fresh sage leaves

1/4 tsp Ground nutmeg

Heat olive oil in a large heavy-bottomed pot or Dutch oven over medium heat. Add the onion and sautรฉ until translucent and soft, about 5-7 minutes.

Stir in the minced garlic and cubed butternut squash. Cook for 3-4 minutes to slightly caramelize the edges of the squash.

Pour in the vegetable broth until the squash is submerged. Bring to a boil, then reduce heat and simmer partially covered for 25-30 minutes until the squash is very tender.
