| 2 pieces | Dried Red Chilies |

2 Instructions
Rinse the toor dal thoroughly and pressure cook it with 2 cups of water and turmeric until completely soft and mushy.
Mash the cooked dal well with a whisk or back of a spoon to achieve a smooth consistency and set aside.
In a large pot, dissolve the tamarind paste in 2 cups of water. Add the chopped shallots, carrots, drumstick, and tomato.
Add the sambar powder and salt to the pot. Boil over medium heat for 12-15 minutes until the vegetables are tender and the raw smell of tamarind is gone.
Stir the mashed dal into the vegetable broth. Adjust the consistency with water if it is too thick and let it simmer for another 5 minutes.
In a small separate pan, heat the oil or ghee. Add mustard seeds and wait for them to splutter. Then add dried red chilies, curry leaves, and asafoetida.
Pour this hot tempering (tadka) immediately into the simmering sambar. Cover with a lid for 2 minutes to trap the essential oil aromas.
Garnish with fresh cilantro and serve hot with rice, idli, or dosa.
