1 Ingredients
| Qty | Item |
|---|---|
| 1.5 lbs | New potatoes |
| 1 bunch | Asparagus |
| 4 tbsp | Unsalted butter |
| 4 cloves | Garlic cloves, minced |
| 1 tsp | Fresh thyme, chopped |
| 1 tbsp | Lemon juice |
| 1 tsp | Sea salt |
| 0.5 tsp | Black pepper |
2 Instructions
Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper for easy cleanup.
Scrub the new potatoes and cut them into halves or quarters so they are uniform 1-inch pieces. Place them on the baking sheet, toss with a splash of olive oil, half the salt, and half the pepper.
Roast the potatoes in the preheated oven for 18-20 minutes, or until they just start to soften and turn golden.
While the potatoes roast, trim the tough, woody ends off the asparagus and set aside. In a small microwave-safe bowl, melt the butter and stir in the minced garlic, chopped thyme, lemon juice, and the remaining salt and pepper.
Carefully remove the baking sheet from the oven. Push the potatoes to one side and add the asparagus. Pour the garlic butter mixture over both the potatoes and asparagus, tossing thoroughly to ensure everything is well-coated.
Return the sheet pan to the oven and roast for an additional 10-12 minutes until the asparagus is tender-crisp and the potatoes are fully cooked and browned.
Serve warm, optionally garnished with fresh parsley or a sprinkle of lemon zest.
💡 Tips & Tricks
-
·
Cut the potatoes into equal sizes to ensure they roast evenly at the same rate.
-
·
To easily trim asparagus, bend one spear until it snaps naturally; use that length as a guide to trim the rest of the bunch with a knife.
-
·
For a crispy finish, avoid overcrowding the pan; if the vegetables are too crowded, they will steam rather than roast.
-
·
Add a tablespoon of grated Parmesan cheese in the last 2 minutes of roasting for an extra savory flavor profile.
