How to Make Spanish Seafood Paella with Saffron
Heat the seafood stock in a small saucepan and add the saffron threads to infuse. Keep it warm over low heat.
In a 12-inch paella pan or large shallow skillet, heat the olive oil over medium-high heat. Sear the shrimp and squid rings for 2 minutes until opaque; remove and set aside.
In the same pan, add the onion and red pepper. Sauté until softened, about 5 minutes. Add the garlic and grated tomato, cooking for another 3-4 minutes until the mixture (sofrito) darkens and thickens.
Stir in the smoked paprika and the rice. Toast the rice for 2 minutes, stirring constantly to coat every grain with the sofrito oil.
Pour in the saffron-infused stock. Stir once to distribute the rice evenly. From this point forward, DO NOT stir the rice.
Simmer on medium-low heat for 15 minutes. Arrange the seared shrimp, squid, and raw mussels on top of the rice. Sprinkle the peas over the surface.
Continue cooking for another 5-8 minutes until the liquid is absorbed and the mussels have opened.
Increase the heat to medium-high for the final 1-2 minutes until you hear a faint crackling sound; this creates the 'socarrat' or crispy bottom.
Remove from heat, cover with a clean kitchen towel, and let rest for 5 minutes. Garnish with parsley and lemon wedges before serving.
