"Indulge in a regal feast of tender lamb pieces marinated in a spiced yoghurt mixture, layered with long-grain basmati rice and caramelized onions. This slow-cooked masterpiece brings the authentic flavors of the royal kitchens to your dinner table with every aromatic bite."

1 Ingredients

Qty Item
2 lbs Lamb shoulder, cut into 1-inch cubes
3 cups Basmati rice
1 cup Greek yoghurt
0.5 cup Ghee or clarified butter
3 units Large onions, thinly sliced
2 tbsp Ginger-garlic paste
1 tbsp Garam masala
1 tsp Turmeric powder
1 pinch Saffron strands
0.5 cup Fresh mint leaves, chopped

2 Instructions

1

In a large bowl, whisk the yoghurt with ginger-garlic paste, garam masala, turmeric, salt, and red chili powder. Add the lamb cubes and toss to coat thoroughly. Marinate for at least 2 hours or overnight for best results.

2

Rinse the basmati rice until the water runs clear, then soak in water for 30 minutes. Drain.

3

Heat ghee in a heavy-bottomed pot and fry the sliced onions until dark golden brown and crispy. Remove half of the onions for garnishing.

4

Add the marinated lamb to the remaining onions in the pot. Cook over medium-high heat until the meat is browned. Reduce heat, cover, and simmer until the lamb is 80% tender (about 45-50 minutes), adding a splash of water if needed.

5

While the lamb is cooking, boil a large pot of water with whole spices (cloves, cardamom, cinnamon). Add the soaked rice and cook until it is 70% done (still has a bite). Drain.

6

Layer the par-boiled rice over the lamb curry. Top with the reserved fried onions, fresh mint, and saffron-infused milk.

7

Seal the pot with a tight-fitting lid or aluminum foil. Cook on the lowest heat setting (dum) for 20 minutes to allow the flavors to meld and the rice to finish cooking.

8

Fluff gently with a fork and serve hot with raita.

πŸ’‘ Tips & Tricks

  • Β·

Use high-quality long-grain aged basmati rice for the characteristic aroma and fluffy texture.

  • Β·

Do not fully cook the rice before layering; it needs to absorb the steam from the lamb to finish.

  • Β·

If the pot lid isn't perfectly tight, use a dough seal around the rim to trap all the steam.

  • Β·

Searing the lamb properly before simmering develops a deep, rich base flavor for the biryani.

? Frequently Asked Questions

What is the best cut of lamb for biryani?
Lamb shoulder or leg are ideal because they remain tender and juicy during the long cooking process.
How long should I marinate the lamb?
A minimum of 2 hours is required, but 8 to 12 hours in the refrigerator will result in much more tender meat.
Can I use chicken instead of lamb?
Yes, but you will need to reduce the simmering time for the meat to about 15-20 minutes before layering.
Is it necessary to soak the rice?
Yes, soaking the rice allows the grains to expand and ensures they cook evenly without breaking.
