2 Instructions
Chop the cauliflower into small, uniform florets, discarding the thickest parts of the stem.
Place a steamer basket in a large pot with an inch of water. Add the cauliflower and the whole garlic cloves to the basket.
Cover and steam over medium-high heat for 12-15 minutes, or until the cauliflower is very tender when pierced with a fork.
Important: Remove the cauliflower and garlic from the steamer and let them sit for 2-3 minutes to vent steam. Pat them thoroughly dry with a clean kitchen towel to remove excess moisture.
Transfer the hot cauliflower and garlic to a food processor or high-speed blender.
Add the butter, heavy cream, Parmesan cheese, salt, and pepper.
Pulse and then blend until the mixture is completely smooth and reaches a velvety consistency.
Taste and adjust seasoning if necessary. Transfer to a warm serving bowl and garnish with freshly minced chives.
