2 cans (15 oz) Chickpeas (canned, drained and rinsed)
0.5 cup Tahini
0.25 cup Fresh lemon juice
2 cloves Garlic cloves, minced
3 tbsp Extra virgin olive oil
3 tbsp Ice water
0.5 tsp Ground cumin
0.5 tsp Sea salt
0.25 tsp Smoked paprika
2 tbsp Fresh parsley, chopped
1 tbsp Toasted pine nuts

Step 1. Place the drained chickpeas in a medium saucepan and cover with water. Simmer for about 20 minutes until the chickpeas are very soft and falling apart. Drain well.

Step 2. In a food processor, combine the tahini and lemon juice. Process for 1 minute, scrape down the sides, and process for 30 seconds more to aerate the tahini.

Step 3. Add the garlic, cumin, and salt. Process for 30 seconds.

Step 4. Add the warm chickpeas to the processor. Blend for 2-3 minutes until the mixture is thick and mostly smooth.

Step 5. While the motor is running, slowly drizzle in the ice water. Continue blending for another 1-2 minutes until the hummus is exceptionally light and creamy.

Step 6. Taste and adjust salt or lemon juice if needed.

Step 7. Transfer the hummus to a large serving plate. Use the back of a spoon to create a deep swirl or well in the center.
