2 Method
Step 1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
Step 2. In a large mixing bowl, combine the ground chicken, panko breadcrumbs, egg, half of the minced ginger, half of the minced garlic, salt, and pepper. Mix until just combined, being careful not to overwork the meat.
Step 3. Scoop about 1.5 tablespoons of the mixture at a time and roll into 1-inch balls. Place them on the prepared baking sheet, spaced evenly apart.
Step 4. Bake the meatballs for 15-18 minutes, or until the internal temperature reaches 165°F (74°C) and they are lightly browned.
Step 5. While the meatballs are baking, prepare the sauce. In a small saucepan, whisk together the soy sauce, honey, rice vinegar, sesame oil, remaining ginger, remaining garlic, and cornstarch (dissolved in 2 tablespoons of water).
Step 6. Place the saucepan over medium heat and bring to a gentle simmer. Cook for 3-5 minutes, stirring constantly, until the sauce thickens into a glossy glaze.
Step 7. Once the meatballs are done, remove them from the oven and transfer to a large bowl. Pour the teriyaki glaze over the meatballs and toss gently until every piece is coated.
Step 8. Serve immediately over jasmine rice or cauliflower rice, garnished with sliced green onions and toasted sesame seeds.
