2 Method
Step 1. In a large bowl, whisk together the coconut milk, turmeric, curry powder, fish sauce, and brown sugar to create the marinade.
Step 2. Add the chicken strips to the bowl, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes (or up to 4 hours for maximum flavor).
Step 3. While the chicken marinates, soak bamboo skewers in water for 30 minutes to prevent them from burning on the grill.
Step 4. To make the peanut sauce, combine peanut butter, red curry paste, a splash of coconut milk, soy sauce, and lime juice in a small saucepan over low heat. Stir until smooth and thickened, then set aside.
Step 5. Thread the marinated chicken onto the skewers in a zigzag pattern.
Step 6. Preheat a grill or grill pan to medium-high heat. Lightly oil the grates.
Step 7. Grill the skewers for 3-4 minutes per side, or until the chicken is cooked through and slightly charred.
Step 8. Serve the hot skewers immediately with the warm peanut sauce on the side.
