2 Method
Step 1. Preheat your oven to 400°F (200°C) and line a large baking sheet or cast-iron skillet with parchment paper.
Step 2. In a medium skillet over medium-high heat, brown the ground beef until fully cooked, drain excess fat, and stir in the taco seasoning and a splash of water.
Step 3. Arrange half of the tortilla chips in an even layer on the prepared baking sheet, then top with half of the seasoned beef, half of the black beans, and half of both cheeses.
Step 4. Repeat with the remaining chips, beef, beans, and cheese to create a second layer, ensuring maximum cheese coverage.
Step 5. Bake for 10-12 minutes or until the cheese is bubbly and melted and the chip edges are lightly toasted.
Step 6. Remove from the oven and immediately top with diced tomatoes, red onions, pickled jalapeños, and fresh cilantro.
Step 7. Garnish with dollops of sour cream and serve immediately while hot.
💡 Chef's Tips
-
·
Layering is key: Never just put toppings on the top layer, or you will end up with dry chips at the bottom.
-
·
Grating your own cheese from a block ensures a much better melt than pre-shredded varieties.
-
·
To prevent soggy chips, ensure your beans are well-drained and the beef is not too watery before layering.
