3 large Large yellow onions, thinly sliced
12 fl oz Belgian dark ale (like Chimay or Leffe)
2 cups Beef stock
2 tbsp All-purpose flour
1 tbsp Brown sugar
1 tbsp Red wine vinegar
4 sprigs Fresh thyme sprigs
2 whole Bay leaves
2 tbsp Dijon mustard
2 slices Slices of sourdough bread
2 tbsp Unsalted butter

Pat the beef dry and season generously with salt and pepper. In a large Dutch oven, melt the butter over medium-high heat and brown the beef in batches until a deep crust forms. Remove and set aside.

In the same pot, add the diced bacon and cook until crisp. Add the sliced onions and cook over medium heat for about 15-20 minutes until they are deeply caramelized and soft.

Stir in the garlic and flour, cooking for 2 minutes to remove the raw flour taste. Deglaze the pot with the Belgian ale, scraping up all the browned bits from the bottom.

Return the beef and its juices to the pot. Add the beef stock, brown sugar, red wine vinegar, thyme, and bay leaves. The liquid should just cover the meat.

Spread the Dijon mustard on the sourdough bread slices and place them mustard-side down on top of the stew. Cover and simmer on low heat for 2 to 2.5 hours until the beef is fork-tender.
