| 0.5 tsp | Black Salt (Kala Namak) |
| 0.5 tsp | Sugar |
2 Instructions
Thoroughly wash the coriander and mint leaves to remove any grit. Keep the tender coriander stalks as they hold a lot of flavor.
Place the coriander, mint, green chilies, and ginger into a high-speed blender.
Add the lemon juice, roasted cumin powder, black salt, and sugar.
Add 2 ice cubes or 2 tablespoons of very cold water to the blender. This prevents the blender motor heat from darkening the herbs.
Pulse until the mixture reaches a smooth consistency. Avoid over-blending to prevent the mint from becoming bitter.
Pour into a glass jar and serve fresh or store in the refrigerator.
