"Experience the ultimate Hungarian comfort food with these hearty stuffed cabbage rolls, known as Töltött Káposzta. Tender cabbage leaves are filled with a savory blend of ground pork, rice, and warm spices, then slow-cooked atop a bed of tangy sauerkraut and smoky meats for a deeply satisfying flavor profile."

1 Ingredients

Qty Item
1 large Whole head of pickled cabbage (sour cabbage)
1.5 lbs Ground pork shoulder
0.5 cup Uncooked white rice
1 lb Shredded sauerkraut
4 oz Smoked bacon, diced
2 tbsp Hungarian Sweet Paprika
1 medium Onion, finely chopped
3 cloves Garlic, minced
1 whole Large egg
8 oz Smoked ribs or smoked sausage
1 cup Sour cream for serving

2 Instructions

1

Carefully separate the leaves from the pickled cabbage head. Trim the thick center vein of each leaf so they are flexible for rolling. Rinse the leaves and shredded sauerkraut in cold water if they are too salty.

2

In a large bowl, combine ground pork, uncooked rice, chopped onion, minced garlic, egg, 1 tablespoon of paprika, salt, and pepper. Mix thoroughly with your hands until well incorporated.

3

Take a cabbage leaf, place 2 tablespoons of meat mixture near the stem end, fold the sides in, and roll tightly. Repeat until filling is gone.

4

In a large heavy-bottomed pot or Dutch oven, scatter half of the shredded sauerkraut and the diced smoked bacon at the bottom.

5

Arrange the cabbage rolls tightly on top of the sauerkraut. Place smoked ribs or sausage pieces between the rolls for extra flavor.

6

Cover with the remaining sauerkraut. Sprinkle with the remaining tablespoon of paprika. Add enough water to just cover the rolls.

7

Bring to a boil, then reduce heat to low. Cover and simmer gently for about 90 to 120 minutes until the rice is tender and the meat is cooked through.

8

Let the pot sit for 15 minutes before serving. Serve hot with a generous dollop of sour cream and fresh bread.

💡 Tips & Tricks

  • ·

For the most authentic flavor, use 'Vatru' style or whole-head fermented cabbage found in European grocers.

  • ·

Do not overstuff the leaves; the rice will expand as it cooks and could burst the rolls.

  • ·

This dish tastes even better the next day as the flavors continue to meld in the refrigerator.

  • ·

If using fresh cabbage instead of pickled, boil the head in salted water with vinegar for a few minutes to soften the leaves.

? Frequently Asked Questions

Can I freeze Hungarian stuffed cabbage?
Yes, Töltött Káposzta freezes exceptionally well for up to 3 months. Thaw in the fridge before reheating slowly on the stove.
What if the cabbage is too sour?
Always taste your pickled cabbage first. If it is too sour or salty, rinse the leaves and the shredded sauerkraut under cold running water before assembling.
Do I need to cook the rice before putting it in the meat filling?
No, the rice should be raw. It will cook perfectly inside the cabbage rolls by absorbing the juices from the meat and the cooking liquid.
Can I use ground beef instead of pork?
While pork is traditional for its fat content and flavor, you can use a 50/50 mix of beef and pork, or all beef if preferred.
