Carefully separate the leaves from the pickled cabbage head. Trim the thick center vein of each leaf so they are flexible for rolling. Rinse the leaves and shredded sauerkraut in cold water if they are too salty.
In a large bowl, combine ground pork, uncooked rice, chopped onion, minced garlic, egg, 1 tablespoon of paprika, salt, and pepper. Mix thoroughly with your hands until well incorporated.
Take a cabbage leaf, place 2 tablespoons of meat mixture near the stem end, fold the sides in, and roll tightly. Repeat until filling is gone.
In a large heavy-bottomed pot or Dutch oven, scatter half of the shredded sauerkraut and the diced smoked bacon at the bottom.
Arrange the cabbage rolls tightly on top of the sauerkraut. Place smoked ribs or sausage pieces between the rolls for extra flavor.
Cover with the remaining sauerkraut. Sprinkle with the remaining tablespoon of paprika. Add enough water to just cover the rolls.
Bring to a boil, then reduce heat to low. Cover and simmer gently for about 90 to 120 minutes until the rice is tender and the meat is cooked through.
Let the pot sit for 15 minutes before serving. Serve hot with a generous dollop of sour cream and fresh bread.
