| 1 large | Yellow onion, cut into large wedges |
| 4 cups | Beef broth, low sodium |
| 3 cloves | Garlic, minced |
| 1 head | Green cabbage, cut into large wedges |
| 0.5 tsp | Black pepper |
2 Instructions
Place the potatoes, carrots, and onion in the bottom of a 6-quart or larger slow cooker.
Rinse the corned beef brisket under cold water to remove excess salt and pat dry. Place the brisket on top of the vegetables.
Sprinkle the contents of the spice packet that came with the beef over the top, along with the minced garlic and black pepper.
Pour the beef broth over the meat and vegetables until the liquid reaches about halfway up the side of the beef.
Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 5 hours until the beef is fork-tender.
During the last 1.5 to 2 hours of cooking (if on LOW) or 1 hour (if on HIGH), place the cabbage wedges on top of the beef and vegetables. Cover and continue cooking until cabbage is tender.
Remove the beef and let it rest for 10-15 minutes before slicing against the grain. Serve alongside the vegetables and a drizzle of the cooking liquid.
