Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or aluminum foil for easy cleanup.
Core the bell peppers and slice them into 1/2-inch strips. Peel the red onion and cut it into thick wedges.
Place the peppers and onions onto the baking sheet. Drizzle with olive oil and sprinkle with minced garlic, dried oregano, salt, and black pepper. Toss thoroughly to coat and spread them in an even layer.
Prick the sausage links a few times with a fork to prevent bursting. Nestle the sausages into the vegetable mixture on the sheet pan.
