1 tbsp 10 g Dried Goji berries

Step 1. Prepare the chicken by blanching it in boiling water for 3 minutes to remove impurities. Drain and rinse under cold water.

Step 3. In a large ceramic hot pot or heavy-bottomed pot, add the blanched chicken, ginger slices, spring onion knot, and 2.5 liters of water. Bring to a boil, then reduce heat to low and simmer for 30 minutes.

Step 4. Add the soaked mushrooms, the reserved soaking liquid, goji berries, and red dates to the pot. Let it simmer for another 10 minutes.

Step 5. Clean and slice all fresh mushrooms. Arrange them beautifully on top of the simmering broth.
