| 4 sprigs | Fresh thyme sprigs |
| 3 cloves | Garlic, smashed |
2 Instructions
Preheat your oven to 400°F (200°C).
Pat the chicken thighs dry with paper towels and season both sides generously with salt and pepper.
Heat olive oil in a large, heavy-duty oven-safe skillet (preferably cast iron) over medium-high heat.
Place the chicken skin-side down in the skillet. Cook undisturbed for 8-10 minutes until the skin is deep golden brown and crispy.
Remove the chicken from the skillet and transfer to a plate. Drain all but 2 tablespoons of the fat from the pan.
Add the carrots, parsnips, potatoes, and smashed garlic to the skillet. Toss the vegetables in the chicken fat and season with a pinch of salt.
Place the chicken thighs back into the skillet, skin-side up, on top of the vegetables. Tuck the thyme sprigs around the chicken.
Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the vegetables are tender and the chicken reaches an internal temperature of 165°F.
Let the dish rest for 5 minutes before serving directly from the skillet.
