Stir-Fried Yunnan Ham with Vegetables

| 1 tbsp 15 ml | Shaoxing Wine |
| 1 tsp 5 ml | Light Soy Sauce |
| 1 tsp 5 g | Sugar |
| 2 tbsp 30 ml | Vegetable Oil |
2 Method
Step 1. Soak the Yunnan ham in warm water for 15 to 20 minutes to reduce the intensity of the salt, then pat dry and slice into paper-thin bite-sized pieces.
Step 2. Prepare the vegetables by removing the tough strings from the snow peas and julienning the red bell pepper into thin strips.
Step 3. Mince the garlic and slice the ginger into thin matchsticks.
Step 4. Heat a wok or heavy-based skillet over high heat and add the vegetable oil.
Step 5. Toss in the ginger and garlic, stir-frying for about 30 seconds until the aroma is released.
Step 6. Add the sliced ham to the wok. Stir-fry for 2 minutes until the fat turns translucent and the edges become slightly crispy.
Step 7. Add the snow peas and bell peppers to the wok. Stir-fry vigorously for 2 minutes until the vegetables are bright and tender-crisp.
Step 8. Pour in the Shaoxing wine, light soy sauce, and sugar. Toss everything together for 1 more minute to ensure the ham and vegetables are evenly glazed.
Step 9. Remove from heat and serve immediately, ideally alongside a bowl of steamed white rice.
