2 Instructions
Prepare the filling by finely chopping the garlic chives, napa cabbage, and green onions. Use a cheesecloth or clean kitchen towel to squeeze all excess moisture out of the tofu and the blanched cabbage.
In a large mixing bowl, combine the ground pork, crumbled tofu, cabbage, garlic chives, and green onions. Add the soy sauce, sesame oil, minced garlic, ginger, salt, and pepper. Mix thoroughly by hand until the mixture becomes slightly tacky and well-incorporated.
Prepare a small bowl of water. Lay a dumpling wrapper in your palm and place about one tablespoon of filling in the center.
Dip your finger in the water and moisten the outer edge of the wrapper. Fold the wrapper in half over the filling and pinch the edges firmly to seal. You can create small pleats along the edge for a traditional look.
To steam: Place the mandu in a steamer basket lined with parchment paper or cabbage leaves. Steam over boiling water for 10-12 minutes until the pork is fully cooked.
