Prepare the kimchi by squeezing out as much liquid as possible with your hands or a cheesecloth before finely chopping it.
Mash the firm tofu and place it in a cheesecloth, squeezing firmly to remove all excess moisture. This is crucial for a non-soggy filling.
In a large mixing bowl, combine the ground pork, chopped kimchi, mashed tofu, blanched sprouts, green onions, garlic, sesame oil, soy sauce, and gochugaru.
Mix the filling thoroughly by hand until it becomes a slightly sticky, cohesive paste.
Take a dumpling wrapper and place about 1 tablespoon of filling in the center. Lightly moisten the edges of the wrapper with water.
Fold the wrapper in half over the filling and pinch the edges to seal. You can create small pleats or simply press the edges together firmly.
To steam: Place dumplings in a steamer basket lined with parchment paper or cabbage leaves. Steam over boiling water for 10-12 minutes.
To pan-fry: Heat oil in a skillet over medium-high heat. Fry the bottom of the dumplings until golden, add 1/4 cup of water, cover, and steam until the water evaporates.
