2 Instructions
Press the tofu to remove excess moisture, then cut into 1-inch cubes and pan-fry in a lightly oiled skillet until golden brown on all sides; set aside.
In a large wok or deep pot over medium heat, add about 1/4 cup of the thick coconut cream from the top of the can and the green curry paste. Stir constantly for 2-3 minutes until fragrant and the oil starts to separate.
Pour in the remaining coconut milk and the vegetable broth, stirring to incorporate the paste fully, and bring to a gentle simmer.
Add the bamboo shoots, red bell pepper, and sugar snap peas. Simmer for 5-7 minutes until the vegetables are tender but still retain a slight crunch.
Stir in the sugar, soy sauce, and kaffir lime leaves. Adjust seasoning to taste, adding more soy sauce for salt or sugar for balance.
Add the pan-fried tofu and fresh Thai basil leaves to the pot. Stir gently for 1 minute until the basil is wilted and the tofu is heated through.
Remove from heat and serve immediately over steamed jasmine rice.
