"This vibrant Kadai Chicken features succulent chicken tossed in a rich, tomato-based gravy infused with freshly ground kadai masala. The addition of crunchy bell peppers and onions provides a perfect textural contrast to the spicy, aromatic sauce."

Ingredients

Qty Item
500 g Chicken thighs, boneless and bite-sized
1 cup Bell peppers (mixed colors), cubed
1 medium Red onion, large petals
2 large Tomatoes, finely chopped
1.5 tbsp Ginger-garlic paste
2 tbsp Coriander seeds
3 whole Dried red chilies
1 tsp Black peppercorns
3 tbsp Ghee or Vegetable oil
1 tsp Dried fenugreek leaves (Kasuri Methi)

How to Make Kadai Chicken with Bell Peppers

1

Prepare the Kadai Masala by dry roasting coriander seeds, dried red chilies, and peppercorns until fragrant. Once cooled, grind them into a coarse powder.

2

Heat 1 tablespoon of oil in a wok (kadai) and sauté the cubed bell peppers and onion petals for 2 minutes over high heat until slightly charred but still crunchy. Remove and set aside.

3

In the same wok, add the remaining oil/ghee. Sauté the ginger-garlic paste until the raw smell disappears, then add the chicken pieces and brown them on all sides.

4

Stir in the chopped tomatoes, turmeric, and half of the prepared Kadai Masala. Cover and cook on medium heat for 10-12 minutes until the chicken is tender and the oil separates from the gravy.

5

Add the sautéed peppers, onions, and the remaining Kadai Masala. Toss well to coat the vegetables.

6

Finish by crushing kasuri methi between your palms over the dish and garnishing with fresh coriander. Serve hot with naan or paratha.

Tips for Best Results

  • ·

Do not overcook the bell peppers; they should retain a distinct crunch to contrast the soft chicken.

  • ·

Always use freshly ground Kadai Masala for the most authentic flavor profile.

  • ·

If the gravy is too dry, add a splash of warm water, but remember that Kadai chicken is traditionally a semi-dry dish.

  • ·

Using bone-in chicken will result in a deeper flavor, though it will require a longer cooking time.
