2 Instructions
In a small bowl, whisk together the pineapple juice, rice vinegar, soy sauce, ketchup, brown sugar, and cornstarch until smooth. Set the sauce aside.
Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.
Add the remaining tablespoon of oil to the same pan. SautΓ© the onions and bell peppers for 3-4 minutes until they are crisp-tender.
Stir in the garlic and ginger and cook for 30 seconds until fragrant.
Add the pineapple chunks and the cooked chicken back into the skillet.
Give the sauce mixture a quick whisk and pour it over the ingredients in the pan. Stir constantly for 1-2 minutes until the sauce thickens and coats everything in a shiny glaze.
Serve immediately over steamed jasmine rice or noodles.
