"This Bhindi Masala features tender ladyfingers fried to a delicate crunch and tossed in a vibrant, spice-forward tomato and onion gravy. It is the ultimate North Indian side dish that perfectly balances earthy aromatics with a tangy finish."

Ingredients

Qty Item
1.1 lbs Okra (Bhindi)
3 tbsp Vegetable Oil
1 tsp Cumin Seeds
2 medium Onions, finely chopped
1 tbsp Ginger-Garlic Paste
2 large Tomatoes, pureed
0.5 tsp Turmeric Powder
1 tsp Kashmiri Red Chili Powder
1 tbsp Coriander Powder
0.5 tsp Amchur (Dried Mango Powder)
0.5 tsp Garam Masala

How to Make Bhindi Masala with Crisp Okra

1

Wash the okra thoroughly and pat it completely dry with a kitchen towel to prevent sliminess. Slice into 1-inch pieces.

2

Heat 2 tablespoons of oil in a wide pan and sauté the okra on medium-high heat until they become crispy and change color slightly. Remove and set aside.

3

In the same pan, add the remaining oil and splutter the cumin seeds. Add the chopped onions and sauté until they turn golden brown.

4

Stir in the ginger-garlic paste and cook for 1 minute until the raw smell disappears.

5

Add the tomato puree along with turmeric, red chili powder, and coriander powder. Cook until the oil begins to separate from the masala base.

6

Add the fried okra back into the pan and toss gently to coat with the masala. Cook uncovered for 5 minutes on low heat.

7

Sprinkle with amchur powder and garam masala. Garnish with fresh cilantro and serve hot.

Tips for Best Results

  • ·

Always ensure the okra is 100% dry before cutting to avoid the release of mucilage (sliminess).

  • ·

Do not cover the pan with a lid after adding the okra; the steam will make the pods soft and sticky.

  • ·

If you don't have amchur, a squeeze of fresh lemon juice at the end provides the necessary tang.

  • ·

Frying the okra separately is the secret to achieving that coveted restaurant-style texture.

The key is to dry the okra completely after washing and to avoid adding salt or covering the pan until the okra has been partially fried.
