"A quintessential North Indian comfort food, this Baingan Bharta features fire-roasted aubergine mashed and sautéed with pungent mustard oil and aromatic spices. The deep smoky aroma combined with tangy tomatoes and fresh coriander creates a rustic, flavorful experience that pairs perfectly with warm roti."

1 Ingredients

Qty Item
2 large Large Eggplants (Baingan)
3 tbsp Mustard Oil
1 tsp Cumin Seeds
2 medium Onions, finely chopped
1 tbsp Ginger-Garlic Paste
2 pcs Green Chillies, slit
3 medium Tomatoes, chopped
0.5 tsp Turmeric Powder
1 tsp Kashmiri Red Chilli Powder
1 tsp Coriander Powder
0.5 tsp Garam Masala
1 tsp Salt
0.25 cup Fresh Coriander Leaves

2 Instructions

1

Wash and dry the eggplants. Prick them with a fork and rub a little oil on the skin. Roast them directly over an open gas flame, turning occasionally, until the skin is completely charred and the inner flesh is soft.

2

Place the roasted eggplants in a bowl and cover for 5 minutes. Once cooled, peel off the charred skin. Mash the flesh thoroughly using a fork or potato masher, ensuring you keep any juices that released.

3

Heat mustard oil in a heavy-bottomed pan until it starts to smoke slightly, then reduce heat and add cumin seeds. Let them sizzle.

4

Add the finely chopped onions and sauté until they turn translucent and slightly golden. Stir in the ginger-garlic paste and green chillies, cooking for another 2 minutes until the raw smell disappears.

5

Add the chopped tomatoes, turmeric, red chilli powder, and salt. Cook on medium heat until the tomatoes soften and the oil begins to separate from the masala.

6

Add the mashed eggplant to the pan and mix well with the spice base. Cook for 10-12 minutes on low heat, stirring occasionally to allow the flavors to meld.

7

Sprinkle garam masala and fresh coriander leaves. Give it a final mix and serve hot with Roti or Paratha.

💡 Tips & Tricks

  • ·

For extra flavor, slit the eggplant before roasting and tuck a few cloves of garlic inside the flesh.

  • ·

Mustard oil provides the most authentic pungent flavor, but you can substitute with avocado or vegetable oil if preferred.

  • ·

Do not wash the roasted eggplant after peeling, as this will wash away the smoky aroma you worked hard to create.

  • ·

Make sure the eggplant is very soft all the way to the stem before removing it from the heat.

? Frequently Asked Questions

Can I roast the eggplant in an oven instead of a gas flame?
Yes, you can roast it at 200°C (400°F) for 40-45 minutes, but you will lose the signature smoky flavor of the traditional bharta.
Is Baingan Bharta vegan and gluten-free?
Yes, this recipe is naturally vegan and gluten-free as it uses whole vegetables and ground spices.
How do I know if the eggplant is cooked perfectly?
The eggplant should feel very light and collapse easily when pressed. A knife should slide into the center with no resistance.
Can I use frozen or canned eggplant for this recipe?
It is not recommended, as the texture and the essential smoky flavor come specifically from fresh, fire-roasted whole eggplants.
