2 Instructions
Wash and dry the eggplants. Prick them with a fork and rub a little oil on the skin. Roast them directly over an open gas flame, turning occasionally, until the skin is completely charred and the inner flesh is soft.
Place the roasted eggplants in a bowl and cover for 5 minutes. Once cooled, peel off the charred skin. Mash the flesh thoroughly using a fork or potato masher, ensuring you keep any juices that released.
Heat mustard oil in a heavy-bottomed pan until it starts to smoke slightly, then reduce heat and add cumin seeds. Let them sizzle.
Add the finely chopped onions and sauté until they turn translucent and slightly golden. Stir in the ginger-garlic paste and green chillies, cooking for another 2 minutes until the raw smell disappears.
Add the chopped tomatoes, turmeric, red chilli powder, and salt. Cook on medium heat until the tomatoes soften and the oil begins to separate from the masala.
Add the mashed eggplant to the pan and mix well with the spice base. Cook for 10-12 minutes on low heat, stirring occasionally to allow the flavors to meld.
Sprinkle garam masala and fresh coriander leaves. Give it a final mix and serve hot with Roti or Paratha.
