Wash the baby bok choy thoroughly, pat dry with a paper towel, and slice them in half lengthwise. Larger heads can be quartered to ensure even cooking.

Heat both the vegetable oil and sesame oil in a large wok or heavy-bottomed skillet over medium-high heat until shimmering.
