2 Instructions
Prep the vegetables by cutting the cauliflower into bite-sized florets and peeling/cubing the potatoes into 1-inch pieces.
Heat the oil in a large deep skillet or wok over medium heat. Add the cumin seeds and let them sizzle for 30 seconds until fragrant.
Add the finely chopped onion and sauté for 5-6 minutes until golden brown. Stir in the minced garlic and grated ginger, cooking for another minute.
Lower the heat and add the turmeric powder and salt. Add the potato cubes and stir well to coat them in the spiced oil.
Add the cauliflower florets and a splash of water (about 2 tablespoons). Cover with a tight-fitting lid and cook on low-medium heat for 15-18 minutes.
Check occasionally and stir gently to prevent sticking. The dish is ready when the potatoes are fork-tender but the cauliflower still holds its shape.
Remove the lid, sprinkle with garam masala, and garnish generously with chopped fresh cilantro. Serve hot.
