Step 2. Fill each chilled glass halfway with fresh ice cubes.
Step 3. Pour 3 oz (90 ml) of Sachi Soy Wine into each glass.
Step 4. Add 0.5 oz (15 ml) of fresh yuzu juice and a small splash of simple syrup (about 0.25 oz or 7.5 ml) to each glass.
Step 5. Top each glass with 2 oz (60 ml) of chilled sparkling water.
Step 6. Use a long bar spoon to stir gently from the bottom once or twice to combine the ingredients without losing the carbonation.

💡 Chef's Tips
-
·
Use high-quality, large ice cubes to prevent the drink from diluting too quickly.
-
·
If fresh yuzu juice is unavailable, a 50/50 mix of lemon and lime juice serves as an excellent substitute.
-
·
For a more botanical profile, add a slice of fresh ginger to the glass before stirring.
-
·
Always add the sparkling water last to ensure the drink stays fizzy and well-mixed.
