2 Method
Step 1. In a small bowl or measuring cup, whisk together the honey and yuzu juice until the honey is completely dissolved into a syrup.
Step 2. In a large glass pitcher, place the fresh mint leaves and use a muddler or the back of a spoon to gently bruise them, releasing their aromatic oils.
Step 3. Pour the Sachi soy whey wine and the prepared yuzu-honey mixture into the pitcher, stirring gently to combine with the mint.
Step 4. Fill four highball or tall glasses with ice cubes and divide the Sachi mixture evenly among the glasses.
Step 5. Top each glass with chilled sparkling water and give it a very quick, gentle stir to maintain the carbonation.
Step 6. Garnish each glass with a fresh lemon or yuzu slice and an extra sprig of mint. Serve immediately while chilled.
