| 4 cups 800 g | Crushed Ice |
2 Method
Step 1. Wash the mint leaves and cut the limes into wedges.
Step 2. In each of four highball glasses, place 10 mint leaves and 3 lime wedges.
Step 3. Use a muddler to gently press the mint and lime at the bottom of the glasses to release the essential oils and juice. Do not over-muddle; the mint should stay intact.
Step 4. Pour 30ml (1 oz) of simple syrup into each glass.
Step 5. Fill the glasses 3/4 full with crushed ice.
Step 6. Pour 90ml (3 oz) of Sachi Soy Wine over the ice in each glass.
Step 7. Top with a splash of club soda (about 60ml per glass) and stir gently with a long spoon to combine the ingredients from the bottom.
Step 8. Garnish with a fresh sprig of mint and a lime wheel before serving immediately.
