0.25 cup 15 g Fresh parsley, chopped

Step 1. Infuse the broth: Heat the seafood broth in a small saucepan and add the saffron threads. Let it steep on low heat to release the golden color and aroma.

Step 2. Sauté the seafood: In a large paella pan or wide skillet, heat olive oil over medium-high heat. Sear the shrimp for 1-2 minutes per side until pink, then remove and set aside.

Step 3. Prepare the Sofrito: In the same pan, add chopped onions and red bell peppers. Sauté until softened (about 5 minutes). Stir in the minced garlic and smoked paprika, cooking for another minute until fragrant.

Step 6. Add seafood and peas: Gently press the mussels (hinge side down), seared shrimp, and peas into the rice. Continue cooking for another 5-8 minutes until the liquid is absorbed and mussels have opened.
