2 Method
Step 1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Step 2. Break the cauliflower into bite-sized florets. In a large bowl, toss the florets with olive oil, cumin, smoked paprika, and salt until evenly coated.
Step 3. Spread the cauliflower in a single layer on the baking sheet. Roast for 25-30 minutes, flipping halfway through, until the edges are nicely charred and the stems are tender.
Step 4. While the cauliflower is roasting, prepare the sauce by whisking the Greek yogurt, harissa paste, and lemon juice in a small bowl until smooth.
Step 5. To assemble, spread a generous layer of the harissa yogurt onto a serving plate.
Step 6. Pile the warm roasted cauliflower on top of the yogurt and garnish with freshly chopped parsley and an extra drizzle of olive oil if desired.
