| Qty | Ingredient |
|---|---|
| 2 lbs 900 g | Heirloom tomatoes, assorted colors |
| 16 oz 450 g | Burrata cheese balls |
| 0.5 cup 15 g | Fresh basil leaves |
| 3 tbsp 45 ml | Extra virgin olive oil |
| 2 tbsp 30 ml | Balsamic glaze |
| 1 tsp 6 g | Flaky sea salt |
| 0.5 tsp 1 g | Freshly ground black pepper |
2 Method
Step 1. Slice the heirloom tomatoes into 1/4-inch thick rounds or wedges and arrange them artfully on a large serving platter.
Step 2. Carefully place the burrata balls in the center of the tomatoes. Use a knife to gently break the outer skin of the burrata, allowing the creamy stracciatella center to spill out slightly.
Step 3. Tear the fresh basil leaves by hand and scatter them generously over the tomatoes and cheese.
Step 4. Drizzle the entire platter with high-quality extra virgin olive oil followed by the balsamic glaze.
Step 5. Finish by seasoning with flaky sea salt and freshly ground black pepper just before serving to maintain the texture of the salt crystals.
