1 cup 120 g Cake flour, sifted
1.5 tbsp 20 g Unsalted butter, melted

0.33 cup 40 g Powdered sugar
1 tsp 5 ml Vanilla extract
1 lb 450 g Fresh strawberries, hulled and sliced

Step 1. Preheat your oven to 340°F (170°C) and line an 8-inch round cake pan with parchment paper.

Step 2. In a large heat-proof bowl, combine eggs and granulated sugar. Place the bowl over a pot of simmering water (bain-marie) and whisk until the mixture reaches approximately 100°F (40°C).

Step 3. Remove from heat and beat the egg mixture with an electric mixer on high speed until it becomes thick, pale, and reaches the 'ribbon stage' (about 5-8 minutes).

Step 4. Gently fold in the sifted cake flour in three batches using a spatula, being careful not to deflate the air bubbles.

Step 5. Combine the melted butter and milk in a small bowl, then fold a small amount of the cake batter into it to lighten. Pour this mixture back into the main batter and fold gently until just combined.

Step 6. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean. Cool completely on a wire rack.

Step 7. For the frosting, whip the chilled heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
